Preparation for soup
Start by, boiling water to blanch the broccoli. Blanching is a cooking process in which a food is scalded in boiling water, then removed after a short period of time (3-5 minutes) and placed into a bowl of ice (or under cold water) to halt the cooking process and retain the color of the broccoli.
In a large pot, cook the onion in olive oil until translucent but not brown. At this point you should season with the cumin seeds, salt and pepper. Add the blanched broccoli to the onions and begin to mix a cook until soft, again it is important to not brown the broccoli. After 5-10 minutes, add the water to the broccoli-onion mixture, stir and bring up to a simmer. Then add the coconut milk and mix until combined. After 10 minutes of cooking, add the parsley and blend the whole mixture until smooth using a hand blender or smoothie blender. Once plated sprinkle some ginger, Sumak and turmeric for aesthetics and flavor.

Preparation for Crackers
Mix all ingredients together in a bowl until evenly combined and you see no lumps of flour. The dough will be very sticky, so wet your hands with some water and start to spread the mixture. Spread out onto a nonstick baking tray and bake as a whole cracker. This makes it faster and easier. You can then break the crackers into beautiful shards after they have baked and cooled. Bake for 15 minutes in a 180 degree oven.
Then grate over your favorite cheese, and bake for another 3-5 minutes, in order for the cheese to melt.
